was wondering how to get really good at building habitats. Who builds them for aquariums and zoos? where to they learn how to construct them?

What do you want to build exactly? I'm self-taught but if I were getting into things today I'd be teaching myself by reading woodworking forums, etc.
Zoos have two basic approaches to building. First, animal staff work closely with maintenance departments to build what they want. Many large zoos have remarkably competent maintenance staff who can pretty much build anything. Also, animal staff often become pretty handy at construction themselves. It's sort of a job necessity.
Other zoos contract out companies like Larsen to do their exhibits. I was actually trained by a Larsen employee on how to do rockwork.
Maybe Matt Campbell can go into this a bit more.
