I must be lucky, too, because my guys will eat anything I put in front of them! I rotate greens and veggies each trip to the grocery store, so over time they get a mixture of collards, mustard greens, bok choy (they especially love baby bok choy) carrots, zucchini, yellow squash, and green beans. I'll also give them a little of whatever fresh herbs or veggies I may have bought for that week's cooking, and have found that they love snow peas, parsley, and cilantro as well. They're not big fans of rosemary, though. One thing that I try to get and keep on hand is nopalitos, or prickly pear pads. They come already prepared in most stores around here, and cut into small strips. My uros love them and they're great for hydration. My guys were wild caught and we had trouble getting them to eat at first, and the nopalitos (along with baby bok choy) saved the day!
On the same note, most grocery stores around here sell aloe vera leaves. Does anyone know if they're good for uros or not? seems like it would be an ideal food for them, but I wasn't sure and didn't want to risk it without knowing.
