wherever the probe is, that's what will be displayed. I believe what you're refering to is place the probe in the hot end (where you want to measure the temps) and place the display unit away from the heat (aka cool end). That's for placing the entire unit inside the enclosure. For myself, I use a temp gun to measure temps, IMO more reliable since you can check a variety of spots rapidly. I can check floor temp, water temp, wall temp and animal temp in less than a minute.
