The caption from these photos read...

He has to be very old, fantastic animal. I love to hear them bellow. I know you are not supposed to but I used to feed them just to watch them come up when we lived off the Amite river in Louisiana.

Well Ken, they are not called Louisiana yard dogs for nothing. We are sure more resourceful than you Memphis city boys. Just think you have all the makins for one hell of a Sauce Piquant, you got the alligator and he brought the deer so now all you need is a few seasonings, some roux, andouille sausage and some rice....lol....

Ever tried venison andouille? A friend of mine has a "smokin" recipe from his processing shop...man, I can't taste a thing after the first three or four bites...whew!!!!

Jim, I have had the deer mixed with pork andouille, but not the pure deer. My Uncle owns a smoke house in Ville Platte La, and he makes a chicken one that is really good. He also does it the old way and uses natural casings. But he also still makes ponces so that will tell you just how old he is...lol... I have had the deer boudin, it is pretty good but to me you can't beat the pork one.

Ohhhhhhhhhhhhhhhhh man!!!!! Supper time at your house sounds real good!!!!!!!!!!!!!!!!!

My deer processor's family is from Thibodaux (Ron Guidry country) and their recipes are spicy...whew!!!!!!!! I'm not going to try his "coon" andouille...

I prefer the pork boudin as well...

I have family in Thibodaux, i do love to go and visit, but the coon is a no no, My daddy still cooks coon on a regular basis and I still won't eat it. My kids and my husband love it, but to me it is to close to eating the family dog so I just pass on it. I do like alligator andouille it is really good..
Jim you have made me so home sick that i had go and order a case of andouille for the holidays..lol.. We will have good eaten here by Wendesday noon..lol.. I will send you a link to where you can get the real andouille in a private email. you have to order the case but it is the best.

Thanks...I'm looking forward to going home for Christmas for some "home" cook'in...I never developed a taste for dem coons either...but, as one of my old college professors (also from Thibodaux) used to say...

"Cajuns eat crawdads and coons eat crawdads...so it's dem or us!"...Ha! Ha!

Thanks...judging from the size of this boy...it looks like he gets more deer every year than I do!!!! And he ain't got no hands...just big pointy teeth and a knack for the ambush!!!!
