nontoxic plants that RES won't eat?

If the RES wont eat them, would it really matter whether or not they were toxic?

I read somewhere that turtles do not like to eat fanwort (aka cabomba), and from my experience it`s true. I bought it once and it looked really nice floating in the tank. My turtle did not eat it like anachris, which he loves. But, he did break up parts of it (can`t leave anything alone), and the needle-like pieces went right to the filter.
