Salad. Here's a good nutrition link.

Supplements. I would use the Rep-Cal Ultrafine Calcium with D3. Rep-cal Calcium has no Vitamin A or Phosphorus which are bad. I also use the Rep-Cal Herptivite multivitamin. There is no need for a protein supplement. Your dragon should get enough protein from live food. I can give you an idea of how often to use both if you tell me how old and how big (length/weight) your dragon is.

Head bobbing. Below is a link to a good care sheet that discusses head bobbing at the bottom.

You don't need a protein suppliment. Insect fill that role quite nicely. Crickets, silkworms, butterworms, phoenix worms, various species of roaches (feed only young of the larger species, the adults are both too big and too hard to give to dragons) and for variety but not as a staple, insects such as mealworms, superworms, waxworms.

Others have already posted good websites to use when selecting greens for your dragons as well as good care sheets. I suggest doing a google search on bearded dragons and read every caresheet you find. Many will contridict eachother but the ideal is to be aware that there are a few different ways to care for dragons. Researching all you can will give you a better understanding on what you can do to give yours the best care possible.

There are also several good books out now for bearded dragons. Buying one or more of these books is a good source to have on hand, if you can't get online to double check things or to research if any problems arise.

Important thing on feeding dragons is give as much variety as possible. This means in insects and greens. Pick a good couple of staple greens, such as collard greens and dandelion greens which you can find in your local grocery store easily, add in other greens for variety regularly. Crickets are a good staple insect but mixing them with silkworms and other insects is good to.
