One of my corns is a little over a year now. I feed her a large fuzzy about once a week.

Only thing is, she always eats very quickly and then roams around her tank in "hunt mode" like crazy for at least an hour. Does this mean I'm not feeding her enough? If so should I simply increase the feeding times per week, or should I give her two mice in one sitting?

I would stay at feeding once a week.
Just move up to one hopper a week.
If you need to get rid of your fuzzies then go for two fuzzies a week until they are gone and move up to a hopper.
