One suggestion I've gotten from www.anapsid.org is to shred all the food very finely, then the ig can't pick out their favorite parts... Also, put the leaves out for him after he has eaten some of the other food, so he doesn't just eat leaves... Good luck!
Begin to mix very small amounts of other greens, squash,
parsnip, green and yellow peppers, sweet potatoe and other
veggies. Keep fruit to a minimum. Mine really like strawberries
and bananas. Increase the amount each week until he is eating
what he should be. Picky iguanas are generally not that healthy
long term because they are not receiving a varied diet.

I've tried to chop it smaller but then he didn't eat anything. So what should I do now?

You are going to have to stand your ground. Try leaving
the collard greens larger and try adding some turnip greens
shredded smaller. Don't add everything at once. Just try
adding one new ingrediant a week. Your ig will eat but you
are going to have to stick it out. I know we don't like to
see our iguanas go hungry even for a day but in the long run
this is what is best for him.
When I adopted my male, he was fed nothing but pelleted ig
food. He didn't know what to do when he got fresh food and would not eat for several days. I was adding fresh food to
the pelleted and in no time he was leaving the pelleted and
eating the fresh.
