I fed my snake and he jumped right on it. He is 3'1" and weighs 790 grams. I went back to look and he had the rat lying dead on the floor of his feed box. He ate the rat, but I was wanting to know if it unusual to not it swallow immediately.

It's not unusual at all. Some of mine take a few minutes to start swallowing, and others are really fast. I guess it just depends on the individual.
Not unusual at all for them to not eat right away. I have one who will first kill everything I put in his cage, then go back around and eat them one by one (No, I don't leave them unsupervised while eating). The other will swing, gnaw, and drag the large rat through the water dish before eating. It's all part of the personality of the animal.
