Yellow fungus in tank

I use a biological soil for my amphibians, made from a recipe in one of Phillipe DeVosjeli's (sorry about the spelling there) books (sand, peat, coco fiber, perlite, cyprus mulch, springtails). I've been using it for a couple years w/ no problems. I made a new batch recently & added it to a few enclosures. Now in one enclosure (my southern toad) I'm getting patches of yellow fungus. I think it's a fungus. I've been either removing it or mixing it into the soil. Any idea what this is or what to do about it?

I get that stuff a lot.. it only happens when I use coconut fiber blocks in my soil mixtures.
