How many would I need to start a colony would 20-50 be enough?

I once started a colony with 1/2 dozen.
You should be well on your way with that many!
Then again, it depends on how many you need to produce
I'd suggest setting up several colonies; that way if one fails you have back-ups.

So I should just keep them warm and have enough water crystals for them and food and they should do ok right?

I don't use the water crystals, but I imagine they'll work.
I keep mine in the low eighties, on about 3" of mulch/potting soil, with a few pieces of egg carton. I just feed them scrap veggies & fruit, & sometimes fish food flakes. Once in a while, I might pour a bit of water in, or mist the tank (I use a 10 gallon), but they get most of their moisture from the food.
I'm just kind of maintaining them, so you might do it differently to produce quantities.
