When purchasing possible hets, how do you know they aren't just selling normals? is there any thing to look for professional wise. And document wise, how do I know if its legit?

Remember that a "possible het" IS VERY LIKELY to be in fact a normal. I have possible double hets (albinon X jolliff axanthic) available right now that I'm selling for the price of normals. When buying possible hets, you pretty much have to accept that you're dealing with a long shot and then anything you prove out is gravy.
I guess to better answer you question regarding documentation, look to see if the breeder has pictures of the clutch being laid and hatching, etc. Most folks will also send you a record card or other document with the genetics info...

I would recommend saving up for 100% hets. Just my two cents.
Joe has some really sound advice. I have picked up a few 50% in the past, but they were picked up because they were female - not 50%. If they don't prove out, no big deal, I needed females. If they do, then like Joe said, gravy.
When looking to purchase, use the same things you do for any purchase: quality, communication, experience, etc. Talk to the seller and get a good feel for them. Do some research, etc.

I'm down to my last clutch of the year (around 55 days). Curiousity got the better of me so I took a peek this morning. Not only did I miss what I was hoping for, I struck out on twins again. Another 5 clutches (26 good babies) and no twins. Looks like our Twins "side bet" goes unclaimed for another year....
I have eggs due any day (actually, I was expecting some action 2 days ago), and the last clutch of the season was just laid 5 days ago (Sept 1). No twins so far.

The Hurricanes have been downgraded to a tropical depression.
An animal is either het or not - so "possibles" are just that they could very well just be normals there is no way to know without breeding.
If your question is how do you know if the breeders possibles actually have a chance of being het and came from a morph bloodline as opposed to imported normals marked up - it comes down to reputation - ask around - see who is trustworthy and who is not.
A lot of breeders don't give out paperwork on possibles - tho if you ask nicely they might give you a copy of their hets paperwork or a written bloodline - but you wont get a guarantee.
The exception on guarantees might be that some breeders will guarantee if you buy 4 or 5 of their possibles one will eventually prove out.
Unless you just want a dinking project - just by known hets - they are very affordable - $400 and you can get a pair of known het albinos - that's a pretty good deal.

I once bought 100 pos het female albino boas from Pete Kahl and when I raised them all up and bred them to known het males, they produced almost exactly the percentage albinos they were supposed to.
No big breeder is going to risk his rep by selling normals in place of pos hets.
not everyone is a scammer. every breeder is going to produce some poss hets for one reason or another, and they might not want to keep them all. lots of times, say spider het ghost x het ghost, they would only be interested in keeping the ghosts and honeybees. those female 66 per cent het ghosts and spider 66 per cent ghosts are gold for somebody. two things to keep in mind. make sure you buy them from a breeder who has his act together. sloppiness can be just as deadly as dishonesty. and second, buy them cheap. 100 per cent hets are pretty affordable now, so paying a premium for poss hets isn't smart. i've had lots of success with poss hets i picked up 4-5 years ago, and the people who sold them to me are my favorites to do business with. kd

Buy from a repitable breeder , you should be able to buy 50 % hets for narmal prices.Buy a male , 100% males are cheap, I would recommend buying all the females of a full clutch, You have a very good possibility of finding the one with that gene you need. If nothing else you have a bunch of females at standard price.
