I've found some tubs through my work that will work perfectly for a mouse breeding rack. I would like to build a food hopper and a slot for the water bottle in the lid if possible. Does anyone have a link to a website that shows how to do this or photos and a description of how you've done it yourselves? (I'd like it to be similar to the "lab cages" that bigappleherp.com sells if that helps at all...)

That helps a bit. I've looked around a lot and I think I am going to try my luck w/a rack system and found the plans to do it on another forum.
