If I can get my BP's to switch to frozen, which will eventually happen. What do you do with a thawed rodent that a snake just does not want to eat? I guess my question is, is it ok to freeze them again or is it trash?

it is ok to refreeze, just as long as the rodent hasn't been unthawed for hours making it rotten. i generally just refreeze once.
just don't let it start to turn on you by leaving it out too long.

Can they be put in the fridge after being unfrozen if not taken and planned on trying again in a day or two? Then thrown out?

Thats what I do. I've kept them in the fridge for up to 7 days between feedings and never had any problems.
I always trashed mine after one feeding attempt. If you feed you snake a bad rat, it could make it sick. I have switched to live, but used to feed all my ball pythons, that would take f/t, f/t. That is another reason that I switched to live. Some would only, sometimes, take f/t, but would always take live. I feed all my adults small rats. After they have eaten, I offer my adult females a second small rat, and some take it. The nice thing about live, is that you just put them back into the holding rack for another week. I have never had an issue with a rat biting my snakes. Hope this helps.
