Looking good. Well, you could weigh her, but with one gecko it is probably a waste of equipment. Monitor her tail fat. The best advice I was given was that the tail should look as big as an average man's thumb. But what you want is a chubby, but smooth taper, if you get a big bulge that's bad. Also, as geckos reach just over optimum weight (considered good times to breed) they usually will develop what looks like water blisters behind their armpits. That's a sign to level off the feeding.
Honestly, she'll (he'll) slow down when she gets to the weight they want to. I have only seen obese geckos when they were constantly tong fed and not allowed to choose the amount they want.
She is definitely healthy looking. I'd put just a few more grams on her, which she may or may not do if she starts to winter now, but will most likely do this spring. But she's much, much better and very close to ideal weight. Great job!
