Do they make 30G breeder tanks without the plastic middle part (the part that sits on top of the tank and goes straight down the middle to the other side)? And do they make screen tops that fold open for them?

To my knowledge, none of the breeder tanks (30g, 40g, and 50g) are made with the center support you see on larger aquariums. Because of the extra wide base, it is not necessary. If the aquarium you are looking at has the center support, it probably is not a breeder tank.
Regarding screen tops, I do not believe they make the hinged model for this size. In fact, I do not think they make a screen top for the Perfecto brand 30g breeders at all. These are 30x18. AGA breeders are 36x18, which they do make screen tops for, but not hinged.

I bought a 30 breeder with the support in the middle about a year ago. Do you know what the sizes are that the hinged screen tops come in?
And doesn't have to be hinged, but maybe sliding or some kind of access to put food in or whatever without having to remove the entire top.
With the exception of the Perfecto Brand 30g, all breeder tanks are 36" long and 18" wide. They make a standard screen top for this size but nothing hinged or sliding. You will probably need to have something custom made.
Just out of curiosity, what are the dimensions of the tank you have and who manufactured it?

You can make a top easily enough- get some 1X2 lumber and make two squares, each big enough to cover half your tank; staple in some window screening, and attach the squares to each other with hinges. You might need to cut a notch in the inside edge of each square so the lumber will rest on the tank top.
You can get all the materials for a few bucks at any home improvement store; they'll even cut the wood to size for you.
