Well, in reality mine are not protective of the babies. Closest they get is a mom will grab up one pinky and run around the cage while I scoop up the rest. I've found I can get that last remaining baby one of two ways. Wait for her to set it down or just grab it and give a little tug, she does not want it hurt and only holds on loosley. Why you may ask are my rats not protective, it comes from years of "selective breeding" You see I have developed a basic set of "rat rules" for my colony.
1) Don't produce - fed off
2) Kill babies - fed off
3) Sick - fed off
4) Jumpy - fed off
5) Bite me - whacked on cement then fed off
After years of implementing the "rules" I have calm, non biting rats. When cleaning out my growout racks, large mortar tubs, I just reach in without even looking, way towards the back that is still under the screen that is covered with food and grab some body part. Whatever body part I grab, I use to pull the rat(s) out. They never bite me, not for real, They do nibble as part of their social order.
