how do you know if its a male or female?

Generally Cal Kings are easy to visually tell by the look of the tail - but the best way is to have it probed by someone who knows what they are doing.
Females will generally have very short tails that taper quickly after the vent, males have longer tails (but still short compared to some species) that generally have a bulge after the vent and taper more slowly.

I decided my old sig was too big.
If it's wearing lipstick, it's most likely a female, though there are some exceptions from time to time.
If you're able to take a picture of the vent and a bit of the tail after it, you could get a decent visual diagnosis if you can post it here.
Just a little bit of experience comparing the two sexes side by side and it'll be easy for you to do it someday too.

If you want to be 100% sure, let a vet probe the animal.
