I added a humidity box with sphagum moss the other day. I went to check it today and it looks like mold is on it - I see white fluffy tufts. Did i do something wrong or is this to be expected?

That shouldn't be happening. How wet are you making the moss?
I'd replace the moss right away, and do a thorough cleaning of the humid hide. Usually what I do to moisten the moss is toss it around in the container while I mist. That way, the water is allowed to seep into the dry moss instead of clumping at the top.
