HI Roger,
your monitor instinctively knows what is prey and what isn't. They're not as dumb as baby bearded dragons. All he has to do is smell it and he'll go for it. They start out with small bugs (crickets), and move up to bigger prey. Your monitor should readily accept thawed mice. If not at first, let him get a little hungry, he'll go for them soon enough.
