How long will frozen pinkies last in a freezer?

Depends.
If your deep freeze is set cold enough to keep them frozen solid 24/7/365, and they're vacuum packed so the freezer burn don't wreck them, they should be good for a year or two. (I've never had a surplus of that magnitude, so I don't know that for a fact.)
I'd rather push the food in times of surplus, and time my rats fertility so that they get retired in the fall, and the ones that stay awake can live off the contents of the freezer until spring.
I keep a couple of rats around for a quick start in the spring, and off I go with a fresh batch when the snakies wake up.
