Yes - you would get Caramel het hypo.
If your caramel is het hypo you might get some amber.
And yes - caramel X amel will produce double hets.
If you are lucky, your caramel is het amel (some say that amel gene may be more common than wild type at this point) and half the clutch will be amel het caramel.
Using terms like "het butter" should be discouraged, I do it from time to time but it is technically incorrect - it is double het for caramel and amel, 1/16 of offspring from double het pairing will be butter - 3/16 will be caramel 66% het amel and 3/16 will be amel 66% het caramel.
