Can I breed a Male California King and a Female Arizona Mtn. King? Or do I need to find a Female Cal. or a Male Arizona Mtn.? And if I can breed these two, what would you call the offspring?

I doubt it and I hope not, but why would you want to try??? You would end up with mutt snakes that noone would want.

you could breed them, but the offspring would be hybrids. There is a lot of "prejudice" against hybrids because they are sometimes sold as pure snakes by some people. I've heard there can be health problems with the offspring also. If your gonna breed snakes for the first time its probably better to go with pure snakes.
