what is a good way to start to learn the genetics behind breeding. for instance like the person who is breeding the high white with the desert.

Go to a used/half-price bookstore and buy a biology textbook. Read the chapters on genetics and inheritance.

You can find stuff online targeted at snake breeding particularly, but a lot of what is posted online for "genetics tutorials" contains a lot of information that isn't correct.
