On sexing I'd say it depends on how your sexing, but you can feel for it right away.
With shipping you're going to want them feeding, unless you plan on just offing them to some wholesaler in which case you can just box them up right out of the chute. I'd opt for getting them feeding. Then shipping once they've had 3 meals.
