What percent possible het is an animal that is the result of crossing between a het (100%) and a 50% possible het? I know if you cross two hets you get a 66% poss. het.

If you breed a 100% het x a poss het one of two things will happen...
1) You hatch out the desired trait and prove the poss het to be a definite het. All offspring not showing the desired trait are 66% poss hets.
2) You do not hatch out any offspring with the desired trait, thus proving the poss het to be a normal (may take more than one breeding) and the offspring are all 50% poss hets. The reason I say it might take more than one breeding season is because you may just get unlucky and miss the odds the first time.

So it isn't done to call the offspring of a 50%possible het a 25% possible het, if unproven?

I wouldn't say that you can't go about it that way... but to answer your questions, no it's not usually done that way.
I guess it would be a plus though, to inform your customers that the parent is an unproven possible het.

It's at least 50%, as a het x a normal is a 50% poss het, so it one were to give any "credit for the 50% poss. het parent (whose offspring would be 25% poss het if I figure right), it would be higher than 50%. If you give no credit than it's 50% poss het ???
If a baby is 50% poss het from one parent and 25% poss het from another parent what does that add up to? I know it's not 75%, as hetxhet=66% poss het
