I don't quite know how old my corn is but it's about 2-2.5ft. long. The thing is that I fed it one small mouse (not pinky) on Monday and another one on Thursday and ate them both w/o hesitation. But, the pet shop told me that they fed it 1 mouse every 2 weeks, and when I got the corn it was a bit skinny; I could not grab any "skin" anywhere (which I have read means that it is under fed). Aaaanyways, I was wondering if I should continue to feed it 2 mmice per week or change its diet or what?

An appropriately-sized meal (mouse as big as or slightly larger than the diameter of the snake) every 5-7 days would be an ideal schedule.
