You would breed albino to anery and produce double hets. When you breed the double hets back, what percentage do you get of each? The snow would be 1 in 16 correct?

Probability wise that would be the correct assumption. But as Punnett squares goes, those are merely probabilistic ratios which in reality are not always correct according to the ratio as you already probably know. But yes, 1 in 16 is the correct Punnet square ratio for double hets.
Here's what the Punnet square 1 in 16 output suggests for a double het pairing:
1 normal
2 normal het albino
2 normal het axanthic
4 normal double het axanthic and albino
1 albino
2 albino het axanthic
1 axanthic
2 axanthic het albino
1 snow
Of course all of the hets from such a pairing could only be considered 66% het for any trait until proven out. Otherwise, their genetics are basically unknown other than what they are homo for.
