Baby snakes in general are very head shy, instictively they know that their head is a very vulnerable part of their body. If you want to get a baby snake to bite you just mess with it's head. As most snakes get older they realize that we are not tying hurt them so they feel less threatened.
I'd say it probably doesn't matter to a snake when you hold them. Most snakes are nocternal, but that probably has no bearing on when they would prefer being held.
