Now I know this is probably the most common snake in Texas but has anyone ever seen an albino rough earth snake??

Yes ,I have caught one.I caught it just North of Dallas and released it in my backyard.Mine looked more Lucy than Albino.It didn't have red eyes.This was about 3 years ago.I check my compost pile every once in a while to see if the gene was passed on to my resident Rough Earth's,but haven't seen any.
