Some can [ esp. small crickets] and large ones can jump out...I don't have much trouble with the medium size crix escaping if the tub is over 18" deep.
Some tubs yes and some no... Its weird I have sooo many tubs, adult crickets can only get 1/3 of the way up. 3/8'' crickets get to the top and climb out?!?!? Weird, probably cuz the Larger ones are so heavy and full of gut-load. lol
Its easy to make a lid, just cut out a large section of the lid that comes with the container, cover with aluminum screen, either tape it on with ducktape or a staple gun. I also expect you can just line the top edge inside the container with two sided tape...thus if any crickets do manage to climb up the sides, they will get stuck to it (assuming they don't just jump out). I have had small crickets manage to climb up the sides of fairly tall plastic containers before but since I don't use crickets as a feeder insect much anymore...I just keep the dozen or so I buy every two or three weeks for my Tarantula in a clear plastic container with a fine mesh covered lid. Used to use Kritter Keepers but found crickets can squeeze out of the slot holes, especially when they are less than an inch long (the crickets).

You all likely prevented a mass exodus since I thought I read that Sterilite is too slick to climb.
