Does anybody know of any software that will help me chart the growth of my new babies?
or at least a simple manual way?

Excel is a simple to use spreadsheet program that can easily be converted to keep track of growth. You can use tables in Word, but I have always found Word is very restricting and acts weird with tables.

for length, do you measure the whole body plus the tail or just from the tip of the nose to the base of the tail?
