In celebration of The Three Wise Men Day (El Dia de Reyes), we decided to roast a pig.

Here is the Epiphany........

On January 6, most of the Hispanic world celebrates El Dia De Reyes, the Epiphany, remembering the day when the Three Wise Men following the star to Bethlehem, arrived bearing their treasured gifts of gold, frankincense and myrrh for the Baby Jesus.

It is an intricate part of Puerto Rican folklore. Traditionally, this day is very important, especially for children, for it is on this eve that they will receive their gifts. This tradition is repeated and reflected in present day with the belief that on this eve the Three Wise Men will visit every good child to deliver them gifts. Tradition states that on the Eve of the Epiphany children collect hay, straw or grass and place it in boxes or containers under their beds. This gesture is a gift of food for the Kings' Horses while they rest in between deliveries. Note (we have no Camels in PR). If a child is good for the past year he will receive candies, sweets or toys. If the child was misbehaved or naughty he would instead find a lump of dirt or charcoal in his box. This tradition is much older than that of Santa's visit on Christmas Eve.

I have one of those caja chinas to cook pigs in as well, nothing juicier in the world after cooking a pig in one of those!
The leftovers are even better@!
Are those the bcc you picked up from us earlier in the year?
Either way, they are looking good!

That's correct. Interesting specimens to work with.

On another note, that is first time that I roast a pig in that box " La Caja China" and it was really impressive. Only 4 hours for a 70 LB pig. I look forward to roast another one in a couple of weeks.......Super Bowl XLV. I probably have to check with my cardiologist first for the approval..... LOL.

Good to hear from you. In August of 2010 I produced a nice healthy litter of Crawl Cay, Belize, boas from that pair..... gender ratio (9.1). I still have all of them. I am having a tough time selling them the economy is not helping much. I am in the process of getting all the permits together to start exporting overseas.
