What is it that makes a black Pastel different from a Pastel?
Black Pastels and Pastels are two completely different co-dominant morphs. The Super form of the Black Pastel is a black snake with a white belly. The Black Pastel is related to the Cinnamon Pastel. A Cinnamon x Black will produce also a black snake. A Cinnamon (or Black) x Pastel produces a Pewter; the pewter from a black x pastel is a little different and is usually called a black pewter

What are the ways to know you have a Black Pastel then?

Look up some pics on google and that should give you an idea of what they look like. I am sure if you do have one it was sold to you as one. If it was sold as a normal most times they are just a normal.
Post pics and the guys/girls will be able to tell you too. If I am not mistake they are almost exclusively black and brown without gold. I have a cinnamon and a pastel and both are dark versions of them. In time you will be able to notice the differences. (It has taken me a while and I still have to reference for some combos)
I think Kevin McCurley will be coming out with an updated ball python book soon. I only have his most recent one and it is nice and has saved me some money. But there might be other books out there? V/R Paige
