I can see 2 reasons for that but I don't know exactly what your setup is so these are just ideas...
If you are using an aquarium, I suppose that you are using a lamp or a ceramic heater with a screen top. This setup is a killer for humidity. Hot air rises and directly escapes through the opening of the lamp taking with it most of the humidity. Because the light is off at night, there is less air circulation at night and an increase in humidity.
A second possibility is that we are only measuring relative humidity. that means that for a same amount of water in the air, the humidity reading from the hygrometer will be higher when the temperature is lower and lower when the air is hotter. If you place your humidity gauge under your lamp I think you would get very dry readings because the hygrometer would get hot and dry.. try to measure humidity away from your heat source...
Some solutions to your problem are to create side vents and completely cover the top. Change your lamp with a radiant heat panel inside the tank so that you don't need an opening on the top...hard to do with an aquarium but that is in part why aquariums are not the best setups for GTP... There should be ways to at least improve the situation by playing with the heat source and the ventilation to somewhat increase the humidity to an acceptable level...

i will agree with that as well , make sure you give enough cross ventilation if you are to cover the entire top, its normal fot humidity to rise at night as you are mimicing nature, sun=lamp, usually before lights out alot of spray for the snakes drinking needs(droplets) and the sake of humidity,l cover 80/90 percent of the top leaving a 1-2 inch gap in the front for air to pass up, leaving the condesation to the sides and backwall, they sell some cool stuff for this humidity issue or go to eckerds drus or simular store 35 bucks gets you a good humidifier put it on a timer, love those thing i must have 10 for all of my monsters running through various pvc pipe , d
