You would be best off taking a group and keeping them together. Mice do not NOT adapt to changes in their social structure. If you move the male female to female they will each smell the strange girls on him and you run an excellent chance of them killing him outright.
I set mine up in 1.5-8 groups and leave them alone. If I add a girl or change a boy I do it by rearranging the whole group when no babies are around or by raising up a baby to replace it.
