Congrats on becoming rescue angels! If there is a way to find out what the original owners were feeding and if your new guy is doing well on it, that is the best. However, if not, try finding a kibble that has meat as the first ingredient. Then look for fillers such as corn, beat pulp, soy. . .try to stay away from kibbles like that. I feed a lamb and rice kibble and my dogs do well on it.

Have children approach your new guy slowly with him in a sitting position. Tell children to extend their hand and let your dog smell them before they try to pet him. Watch your dogs reaction.
>>3. When you walk your dalmation do you ever let him/her go off-leash?
You may want to try a long line first before you let you new guy off leash. See how he reacts when you call him back to you. I always carry treats in my pockets so that when my dog does something right I give a treat or a fav toy.
