GSD - 4+yrs old - hyper, nervous, eats her bed?

I have a 4 1/2 year old German Shepherd. She is a sweetheart to adults, a little unsure around children (luckily there are none in the house) and sometimes a little too playful with one of my cats. She's always been submissive and nervous aggressive. I was able to stop her from urinating whenever she met someone new. (Little things like avoiding eye contact initially and asking her for a toy seemed to help out a lot! She was excited to be playing and not threatened with someone staring her down, that she learned to control herself.)

She constantly pants. Even when she's inside, she is very full of energy. Unfortunately it's excessive at times (90 pounds of hyperness can be a lot to handle - lucky for her she's a cutie!) She is a slightly nervous aggressive dog and can nip when scared. She doesn't bite me, but even though my boyfriend has spent a lot of bonding time with her - she gets nervous around him.

The last of my babbling is her sensitive stomach. I keep her on a strict dog food only diet. No people food and she's ok with that. She will try to sneak a taste from the cat's dish, but she doesn't get much out of it. My question is about bloat or other stomach problems. I've been watching her portions and feeding her small amounts twice a day, but she still has a belly. We thought it was winter weight, but I wanted to make sure that it wasn't anything else. Her stomach isn't huge or tight (which would make me think she was bloated) but since she has always had a sensitive stomach, are there other things I should be watching out for? There are some nights that she paces in her room and cries to go outside. When I let her out - she goes right for the grass to make herself sick. It doesn't happen frequently, but I'm still concerned. She also has a licking problem (she can't seem to stop herself). I can't give her a bed anymore because she eats them. It's a little hard to explain. She doesn't chew them like a puppy might. She doesn't eat them because she's hungry. She gets these fits where she physically cannot stop licking. It gets to the point where she starts pulling at a carpet or blanket or dog bed and ingesting them. Again - it doesn't happen all the time. Any thoughts or ideas?

She may have more than one problem. Certainly needs veterinary help.
