I would expect the behavior concerns to be fighting with other dogs and trying to get out of fences to roam. Neither breed was bred for training, so I wouldn't make this choice if you want a dog to train. Also should not plan to keep another dog of the same sex with this one, and should be prepared for potential heavy grooming and shedding.

I've looked into both breeds myself, and love the staffies, both staffy bulls and am staffies are known for their loyalty and love for children, both sibes and staffies are high energy dogs, both make great jogging or hiking companions, depending on the pup, grooming may not be a big issue, as staffies are short coated dogs and some of the pups will have a staffy coat.
I'd do a simple puppy temperment test to decide which one is best, this implies putting the puppy on his back and roughing him up a little you'd want to see a puppy that doesn't struggle to right himself you would not want a puppy that fights you, tossing keys down, a curious puppy is what you want to see, touching feet and ears, you don want any resistance here.
