Perhaps some time around them would help. Check out local rescue events in your area. Many people who have preconceived notions on pits have never met one. When looking at a rescue, should you and girlfriend live together a few things to look for. Look for pits that are either A: dog friendly. Live with other dogs. Yes there is the prey drive and animal agression in APBT. You need to find one that is proven good with other dogs. A good rescue will know what is a good match. Trust their instincts when you adopt. The other thing you want to look for with a cocker or another small dog involved is B: Good with cats. Small dogs and cats are same sizes.
You can also pass this tidbit to your girlfriend. In the 6 years I have been working with bullies as well as 2 years in a shelter, there have been only two bites on my record. In fact my full life for that matter. Both were cockers. Granted neither were the more stable english variety, however both were cockers. Just because their small does not make them more stable. What you put in the dog is what you get out. Getting off soap box to answer other questions...

Wonderful to hear that. But never let down your guard as an owner of an APBT. There are actually cities where dogs over a certain WEIGHT are banned.

I have never ever heard about the health insurance. Homeowners yes. Thats why we have State Farm. They insure on the dog, not the breed. I have never met anyone who has had any bull breed and had problems with health insurance. I would be safe to say you are in the clear there.
