gerbil or hamster?

i want one that bites less and is more fun to watch

It depends who the pet is for. If its for children then I'd suggest a hamster since they are slower than gerbils (and so easier to catch) and they only bite if you startle them. I've had dwarf hamsters and most of them had never biten me.

Gerbils on the other hand are more fun to watch and can be awake for much of the day, but they do need company. They like the company of other gerbils and yours. I've even found my gerbils listen to the radio and guard my room for me. I have found that the Black ones prefer human company and are highly intelligent (they will even come when you call them), pale ones prefer other gerbil company and can be harder to tame (and can be harder to get to take food from your hand) and the wild coloured ones are good all rounders (litterally, they are more prone to getting fat!!!)
