gerbil or hamster?

i want one that bites less and is more fun to watch

If you want one that will be more active during the day, then a gerbil is probably your best choice. I've had gerbils in the past and a few hamsters. Either is capable of biting, but I have found gerbils are much sweeter with less work. Although I wouldn't give my Harvey up for anything...he's been a doll since the day I met him.
