For the last 6 months or so, I haven't seen Pearl Gouramis in pet stores. I live in Florida, so this might be just a Florida thing. Is it just my imagination or is there something going on with the Pearl stock? Any ideas?

It must just be something going on at your pet store (as with mine because they don't have any puffers). I found some at www.liveaquaria.com - a reputable site. I've ordered many things from there, and if you are looking to purchase some, you can do so there. The only thing I have to say about them is, you have to buy $50 in fish for them to sell you any.
