new, Questions on treats & handling

I work at a veterinary hosptial, and we have 2 amazons and a african grey that live in the lobby. The double yellow headed amazon has never been held before to my knowledge. He is old, and friendly but only a few people can pet him.. he really seems to like me, but I haven't been there for long so I don't want to try and touch him and break his trust with me (what little he has). Anyway, I think he just needs more attention than everyone talking to him and occationally being petted. I know they are very smart and like to learn new things, but I just don't know what I could try to start off with. His cage is almost always open, and he can come in and out as he pleases.. when he's on top of his cage he is at eye level with me but I read that they become dominant birds? Everyone is usually too busy to invest a lot of time, usually stopping to talk with him sometimes, and the cleaning and feeds, but I have the time and I think it would be neat to build a better relationship with him! Any fresh food treats they would really love??

As far as treats go, grapes and almonds are winners. I haven't met a bird yet who doesn't love grapes. Just make sure you clean them well (try to get organic if you can). Also, make sure the almonds are unsalted/unseasoned. You can get them at healthfood stores and some bird supply stores. Just make sure you don't feed to many of the almonds...they are quite healthy, but also quite fattening. On the not-so-healthy-but-not-too-bad side, we give our amazon an occassional ritz cracker. They are his "really have to bribe him" treat.
