Madagascar Hissing Cockroach questions...

I was wondering if someone might be able to help answer a few questions for me:

1) do both male and females hiss or just males?
2) are the Madagascars the only species of hissing cockroaches?
3) I keep reading that in the wild they eat fruits/veggies, so why do people feed theirs dog food also? Or have I read incorrectly?

I think so

Fruit gets smelly and messy, dog food is easier. I prefer using chicken mash, and fruits and veggies for moisture.
