I have a cat that displays several Siamese habits, but she has a very round face, and no physical characteristics. Someone told me there is a type of Siamese with an "apple face." Is this correct?

Yes there are Siamese called "appleheads", I had one as a child many years ago. My mother's cousin so fell in love with applehead meezers, that is the only cat she has every had, and even took one to Moscow when they were transferred there. Bacchu had to have kitty food flown in for him by the case!
He looks like a beauty! Hugs and treats for him!
It is possible she has Siamese mixed in her. It is near impossible for you to know without knowing her parents. I've often thought my Stanley has Siamese in him. He has some of the body/head shape and is very vocal like Siamese I've known.
