How can you tell if a dragon is stressed out?

anywhere from being dark in color to hiding, to refusing food.

how dark in color is "dark"? My beardie gets dark when it's basking. But it isn't like other beardies, where as when I pick it up, it doesn't sit still, it immediately jumps out of my hand or off my arm or wherever, despite how far a landing is. I'm worried because sometimes I can hear it jump up from the branch in the cage and then fall with a slight *thud*. It does this several times a night. I thought beardies were supposed to be calm? The temps are 95 in the cool spot, 100-105 on the other side, and at night it gets to about 85. I still don't know if it's a boy or girl yet, but it's about 4-5" not including tail. Any ideas? Bueller?
