Wont stop eating

I have a cat thats getting a bit chubby. So I started him on Purina ONE weight control food a while back but its not doing any good. Hes actually gained more weight since then.

Part of the problem is we give in and always give him a little more food than he should have. The only reason we do this is cause when his bowl is out of food he starts misbehaving. He starts jumping on counters knocking everything off. He will chew on wires, shoes, anything he can get his teeth around(Ive used any of those spray products to make things taste bad and he doesnt even care about the taste). He will start stalking my wife and I, leaping at us from around corners and latching onto our ancles... it doesnt hurt... and its kinda funny... but not after like the 5th or 6th time. We even had to child proof the cabinet with the food in it cause he was able to open that.

We have taken him to the vet and there are no problems with him. The vet just said we have to stand strong and not give him any more food. Buts its just so hard when its 3 in the morning and all you hear is the constant thudding of a kitchen cabinet cause he cant get it open anymore.

Anyone have any other ideas?

Are we not playing with him enough?
Is there any kind of better food?

I have read that cats in the wild eat little meals all day long. Can you feed him smaller amounts of food through out the day?
Example: Vet says he should eat 3/4 of a cup a day. Could you give him 1/8 6 times a day or 1/16 12 times a day. Of course this wouldn't be possible if you work away from home. But maybe give him little meals in the morning and then little meals every couple of hours after you get home.
