Well, it was a roast beef sandwich (from a leftover steak) for supper, then a nice slice of cinammon swirl fish cake. )The cake was baked in a fish shaped pan)

a spinach dip of ....
nonfat plain yogurt
thawed frozen spinach
ground roasted garlic
minced onions
chopped water chestnuts
a little shedded cheddar cheese

served with warm and toasted wheat pita bread.
washed down with a diet dr. pepper

that was my lunch (was put on a diet by the doctor to lower my blood pressure). i am reduced to eating rabbit food and i hate it, but atleast this was good for me (okay except the cheese, but i used less than an ounce for the whole mix)

I am visiting my family in Texas this week, helping my Mom recouperate from parathyroid surgery (she can't lift anything for a few days). While she rests up, pretty much taking care of the housework, cooking, and my 3 1/2 year old neice that my parents adopted (long Jerry Springer/Rickie Lake story where my 60 year old parents adopted my brother's infant daughter and I provide monthly financial support to help them).

Last night I made pasta in a tomato/spaghetti sauce with mild Italian Sausage meatballs... Haven't had anything this morning, but will probably make the family a big batch of scrambled eggs with cheese and ham very soon (planned for lots of leftover ham from dinner on Monday).

I've decided for lunch, we'll head over to Madame Alto's as, if I remember correctly, we're just a few miles apart here in Texas. Mom is in the Ft. Hood area.

Yuppers - Ft. Hood is only about 150 miles from here - a hop, skip and a jump in Texas terms! Come on down and we'll have barbeque or Mexican food!

Well I think I'll go over to Wis's for raspberry pie. That sounds better than the strawberry yogurt I had for lunch. I'm going to have a nice cup of tea in a minute. Waiting on the water.
