What are the key elements of a complete blood and urinary analysis that these tests look for besides the kidney and urinary tract functions?

It checks for liver function, diabetes, anemia, infection, hormone function, blood coagulation, and pancreatitis, amongst others. It is the most cost-effective screening test available.
